Adrián Marín (formerly of Mextizo) leads this small establishment where there are around ten tables next to an open kitchen. There is also space, at odd hours, for a gastronomic cooking studio. Tacos, marinades, croquettes, rice dishes and the Drolma’s legendary cabrito embarrado (roast kid). Quite an experience. Efficient staff. Small outdoor terrace. Short, well-chosen wine list. Discreet and a definite must.
